Mennonite Cheese Sandwiches

The area of Iowa that we live in has the largest Amish settlement west of the Mississippi. We also have a large Mennonite community. We are not Amish (obviously), nor are we Mennonite, but one of the first foods we were introduced to was the Mennonite Cheese Sandwiches--or at least that is what we call them!



They were served with chili at the soup supper at t he elementary school t hat my kids attended. I still make them from time to time.

Ok - here is a version of the sandwiches (1/8 recipe - so should serve 22)

1.75 lbs American cheddar (or use the bag of pre-shredded)
Scant 1/2 pickle relish
Scant 1/8 cup of sugar
Scant 1/4 cup pimento
4 hard boiled eggs
2 1/2 c salad dressing (miracle whip or mayo - depending on if you like it
sweeter)



Some recipes call for a little less
dressing or more eggs - just depends on
how you like it.

A dish of chili and a Mennonite Cheese Sandwich just might need to be on the menu this week! YUM!

These are the BEST and I haven't had them in ages. You should make a double and bring it camping this weekend!!!
